さばの味噌煮作ってみました!


I have been craving mackeral cooked in miso sauce (さばの味噌煮) lately so I made some myself today because it hasn't been on the school menu recently. 


Soft and succulent! The sweet and savoury miso sauce goes so well with rice I don't even.

Mackerel cooked in Miso sauce (サバの味噌煮)
Serves 1 

1/2 mackerel 
1 slice of ginger

200ml water
1tbsp sugar
3tbsp mirin (sweet rice wine)
3tbsp cooking wine

1tbsp miso
1/2 tsp soy sauce 

1. Wash and pat dry mackerel
2. Make small vertical slices in the thicker bits so the fish cooks evenly
3. Bring water, sugar, mirin and cooking wine to boil on a pan just big enough to fit the fish
4. Place mackerel into the pan skin side up along with the ginger, and turn down to medium-low heat
5. Cook for about 5min while using a spooning the sugar/wine mixture on the fish repeatedly
6. Dissolve the miso in a little bit of water and stir it into the pan with the soy sauce
7. Cover the pan with the lid halfway and leave to simmer for 10-15min
8. When the sauce thickens, its done!

It gets even yummier when you leave it to cool for a bit and the fish just seeps up the sauce ;D
