Easy crustless tofu quiche :3

Took a long hiatus off blogging for a bit being so busy from exams and reports etc. etc. but now that's over, I'm back with a healthy quiche recipe :3 Recipe at the bottom! I ASSURE you you will not regret making this.



These little babies were on sale at only 78yen at the supermarket and I snagged them straight away because, no better excuse than this to start a healthy diet! Japan is awesomeeee!



...and then I realised I didn't know what to do with them because truthfully I'm not such a big fan of plain tofu. I reaaaallly love egg tofu on a hotplate that you can get in Singapore hawkers (omg thinking of it is making me hungry already)


 and agedashi tofu (silken tofu deep friend in a super crispy and fluffy batter)



but I was too lazy to cook rice XD which is really ironic considering how it's much easier to cook rice in a rice cooker than to make a quiche, lol. So anyway,  I looked up recipes for tofu and found out there was an awesome way of cooking a healthy version of my favourite unhealthy fatty food! Quiche! 

The more I looked the more excited I got looking at all the different combinations *_* So I picked my favourite few recipes and mixed and matched them to get the one I made :3 totally yummy. You wouldn't think it was made of tofu! It's a crustless recipe because I was too lazy to make a pie base... or go out the supermarket to get one because it's so cold. But I always preferred the filling anyway! hehe

I used whatever I had in the fridge -- silken tofu, spinach, onion, garlic and sausages but you could probably just use what you have. I imagine it would taste great if you used egg tofu or the firmer kind too.


Easy Crustless Tofu Quiche ふわふわ豆腐のキッシュ
Ingredients 材料 
Tofu 250g
Milk                        1/4 cup
Parmesan Cheese    3 tablespoons 
Salt and pepper to taste
Dijon Mustard 1 light squeeze (or just mustard)
Nutmeg a pinch (optional)

Cocktail Sausages      2, diced
Onion                       1/2, thinly sliced.
Garlic                       1/2+1/2tablespoon, minced 
Mushrooms              1/2 cup, sliced or diced
Spinach 4 stalks chopped up into bite size.
 (I just threw in some frozen spinach hehe)
豆腐                           250g
牛乳                          1/4カップ
パルメザンチーズ 大匙3
マスタード              少々
ナツメグ                 あれば少々

ウィンナー             2本
玉ねぎ                   1/2玉
ニンニク                1/2+1/2大匙
きのこ                   1/2カップ
ホウレンソウ        適量
Method
作り方
1. Preheat oven to 200deg 

2. Cook 1/2 tablespoon of garlic, mushrooms, onion and sausages in a frying pan untill onions are transparent and sausages are brown. The best part about this is you don't need any oil because the fats from the sausage is going to melt and your onions and mushrooms will cook in it and taste like heaven! 

3. Add in spinach and stir around until its wilted. Season with salt and pepper. Set aside to cool a bit.

4. In a mixer, blend tofu, 1/2tbsp garlic, milk, dijon mustard, cheese and salt and pepper. 
If you don't have a mixer, mash up the tofu with a fork as well as you can until it's got a creamy consistency then mix everything together.

5. Now mix your spinach mixture and tofu mixture together in a bowl. Give it a taste, if the taste of the tofu is too strong, add another tablespoon of cheese and a bit more pepper.
 (or pour them into your mixer and stir it around if you're too lazy to wash another bowl like me)

6. Pour everything into an oiled dish and bake for about 35min or until golden and set.

1.オーブンを200度に予熱する
2.ニンニク1/2大匙、ウィンナー、きのこ、玉ねぎを炒める。玉ねぎが透明になって、ウィンナーに焼き色がついたらOK

3.ホウレンソウを入れて、塩コショウで味を調える

4.ミキサーの中に、豆腐、1/2大匙のニンニク、牛乳、チーズ、マスタードを入れてミキサーにかける。なければ豆腐をフォークでよーくつぶしてクリームのような状態になってから他の材料を混ぜる

5.別のボウルにホウレンソウなどを豆腐の生地と混ぜる(私はミキサーの中で全部混ぜたw)味見して、もし豆腐のにおいが強かったらチーズさらにもう1匙入れて、塩コショウも様子見ながら味を調える

6.油をよく引いた容器に流しいれて、35分、または焼き目がついて固めるまでやく

And that's it! So easy and so good.
If you're curious about how much calories this is, here's an estimate:

Tofu = 60kcal/100g so 180kcal
Parmesan Cheese = 20kcal/tbsp so 60kcal
Milk (low fat) = 80kcal/200ml so about 100kcal
Cocktail sausages = 40/pc so about 80kcal
Onions = about 30kcal
Spinach  = about 20kcal
Mushrooms = 10kcal
Total = about 450kcal
